Grilled food and cancer



Yes, the grilling season is here. Naturally, there are all kinds of articles coming out on how grilling is bad for you. Grilling at high heat creates two known types of carcinogenic chemicals: heterocyclic amines and polycyclic aromatic hydrocarbons. Isn't that a mouthful?

Different studies do point to the possibility that maybe, just maybe, grilling causes cancer. Of course, there have been studies that show certain other chemicals caused by grilling protect against cancer. However, I haven't seen those studies mentioned this grilling season.

I supposed you'd probably benefit from grilling at lower temperatures and creating less smoke.

For many thousands of years, mankind has grilled food. It would seem that maybe we've adapted, at least somewhat, to any bad effects. On the other hand, the immediate benefits of food safety outweighed any potential long term bad effects fifty years down the road.

At any rate, there is one thing I'm going to definitely cut back on: processed foods. Things like hot dogs are pretty mysterious to begin with. Grilling them probably just makes unhealthy food worse. However, I've a couple of nice local porterhouse steaks in the freezer that's going to see a grill one bright and sunny day.

  1. As you probably realize, modern hotdogs and bologna are made from everything from chickens, pigs and cattle that aren't marketable as meat. That means snouts, ears, udders, testicles, assholes, ovaries, vaginas and uterus sometimes, plus any organs they don't have another use for plus stomach and intestines. Of course, a little meat sometimes finds its way into the mix, as well as the "pink slime" that results from cleaning meat scraps from the bones with wire wheels. YUM-YUM!

  3. We've been on a low carb, no sugar diet for awhile here. No highly processed foods either. (I've lost 25 lbs, but stalled at a plateau of 340#).
    It's pricy to grocery shop for only healthy foods.
    Ever try cooking steaks in a cast iron pan on stove? High heat, searing it then pop in hot broiler to finish. Fast and delicious. See you tube vids on details.
    Does kinda smoke up the kitchen though.!!

  5. I have no problem with grilling something now and then and have wondered how people were healthy for centuries with "primitive" cooking methods. Things sure do taste better cooked outside over a fire. We have a grill, rocket stove and a solar oven.

    The ketogenic diet (good fats like olive oil, coconut oil, ghee and low carbs) seems to be pretty successful. We have a garden which helps. The veggies in the grocery store look "sick".
